Chef Mark Kiffin of the Compound Restaurant in Santa Fe is well known for his creativity with southwestern cuisine. Kiffin was named the James Beard Foundation's "2005 Best Chef in the Southwest." Zacatecas is Kiffin's new concept, a full service, casual restaurant where guests can order gourmet tacos, tortas, antojitos (appetizers), postres (pastries), Mexican specialties and non-alcoholic beverages (liquidos).
Zacatecas features recipes that have been handed down for generations. "I am working closely with a Zaatecas native chef to create authentic food with flavors that are true to the history and culture of this region in Mexico--a real Taqueria," Kiffin noted in a press release.
Albuquerque is well known for its New Mexican restaurants
, where red or green chile are always an option. Zacatecas instead features Mexican cuisine with a focus on fresh, organic ingredients packed with lots of flavor. Lunch and dinner menus offer appetizers (antojitos) such as the expected salsas and guacamoles, and alternative options such as chicken piccadillo empanadas, fresh masa cups topped with beans and queso fresco, or roasted poblano raja quesadillas.
The Zaca Tacos are served on warm corn tortillas. Options include Cochinita de Pibil, a slowly braised pork in banana leaves with chile, and the chicken tinga, a chicken and chorizo mixture cooked in chipotle salsa. Choices include pork, steak, seafood and chicken dishes. There are vegetarian options as well. Choose from sides such as a black bean refrito or sweet potato fries. There are two salads--the house caesar or the watercress and butter lettuce.
Main dishes include red chile honey glazed salmon, rib eye steak tampiqueno, pork ribs in chipotle sauce and grilled shrimp. Lunch entree prices range from $9 - $12; dinner entrees are $14 - $24. Desserts are classic Mexican, from the Tres Leches Cake to the Kahlua coffee flan.
