Is the chile still good?
- Diane, I would think it would still be good to eat. Sniff tests always work.

Green chile
- This is more of a question. We home roasted the chile, but, while waiting to cool fell asleep, woke up 10 hours later. It went from the grill to the pan, covered and undisturbed. Is it good or should I get rid of it?

Only in NM
- I was listening to a cooking show on the radio that was from NYC. The guests were talking about how they had visited NM during chile roasting season and how it just blew their mind! They had never seen large numbers of people stand in line to have chile roasted in such huge quantities. They talked about how New Mexicans were the only people they had ever seen who treated chile as a "vegetable" as opposed to just a spice. "They were taking whole chile pods and placing them on tortillas and eating them whole" they said! I just had to laugh since that is one of my favorite things to do. Just make a chile sandwich on a tortilla and add a little cheese. It's my fall ritual after I've bagged and frozen my chile for the year. I guess I never thought about how people from other parts of the country must see this phenomenon. Extraordinary really, when you think about it how much chile we consume. I wouldn't have it any other way!!!

Wagner Farms
- We like to go to the market in Corrales, Wagner Farms. We roast a bag and take it home to freeze, and eat it fresh for days and days....

Love Green Chile Roasts!
- Fall isn't fall without chile roasting on just about every street corner. I love getting my fix at the corner of Broadway and Mountain.
